That technique looks interesting. The heat is directly given to the
bean but the smoke and moisture are not trapped. Does this roast give
slightly more sweetness but slightly flat and give less bite?
(I'm just guessing... maybe totally wrong... how is it indeed?)
Doesn't the bean adsorb the odor of the fuel being used? The water
given off by the combustion may also affect the roasting somewhat?

I have roasted with pecan, oak, and hickory wood. I can tell the difference
in flavors, I like pecan best, hickory second, and oak next. However, I
like all of them better than the wok, the whirley, or the poppery II.
There is a slight added flavor that I would describe as fuller or smoother.
I'm afraid I don't have a cupper's vocabulary and I think my taste buds are
from a different linage that most of the people on this list so all I can
suggest is try it some time. All it takes is a BBQ grill and some nice hard
wood. I am on the way to Oklahoma now and I will try to pick up some
mesquite to try when I get back.

Hi Jim,
I'm interested in your open fire roasting techniques. What would happen if I
roasted over commercially produced charcoal rather than wood?
Thanks,

Sounds like it adds another control variable in roasting coffee by
choosing the wood... interesting. Have you ever tried with gas?
(possibly with a bad result?)

I have, and it works great. The only problem is attenuating the heat
to get the right "speed" of roasting. With just a little practice it's
not too difficult.

Nope, I've never used a direct exposure of the beans to gas flame. I do
use gas when weather forces me to roast inside but that is under a wok or
whirly popper. A little while ago, some on this list mentioned that using a
direct gas flame worked ok.

Pecan Jim,

No other takers on the great ANDROCK METAL POPCORN POPPER. I just picked it up for 13 bucks! I guess you and I are the only fire roasters in the bunch! If it gets here before the PNWG 2, I can train some others in by doing a side by side roast with two Androcks going at the same time!

I got one, thanks to a tip from Jim, a few years ago. It's a
sweet roasting tool. When you go camping it's a must for
roasting coffee. I supplied a wedding party of 50, in a park,
last year with fresh roast. It serves for cooking your trout,
too. Also great for roasting indoors in the winter if you have
a wood stove or fireplace. 13$! I paid 25$ for mine, and it's
well worth it, they're well made items.

I might have to bring some cash with me to PNWG2 and see if I can tempt you
into parting with one.
