I am probably not a purist but I have yet to try a light roast that I = liked. Despite our hosts comments about venturing into the subtle fruity = flavors of the roasted beans, I find that when my roasts are Full City = into Vienna I am enjoying the best the bean has to offer. Short of that, every light roast I have tried gives me a raw harsh sour = taste. They look great with great crema but the taste is just too much = for this guy. Am I missing something? Just my opinion, would like to hear yours. |
OK Alfred, It is time for Dr. Crema to come and visit again! I am going to blow you away with some city roasted Isle of St. Helena if you are open on Wed. evening. I have to go to some meetings in Medford on Wed., so if you don't mind, I will drop by with a perscription! I may also bring some cinnamon roasted Kenya Kora, that will make your taste buds dance! It may be the roast just needs to develop more or your preferred taste is for dark. I know mine is for light. How about I roast up some and send you some "light" that I find fully roasted but is not dark? I am not going to fight fair on Wed. evening with Alfred! I have some great looking "city" roasted Isle of St. Helena roasted and resting for Wed. Poor Alfred has never had Isle of St. Helena before! I share your taste, Alfred, for the most part. I have never roasted a coffee that tasted better to me roasted pre-second crack. City roasts are okay, but a little darker is better. Rumor has it, that he has never lost a patient. The problem was that I started with Tom's roast pictorial as a guide and = could never get my roasts to look like the pictures. He explained that the color of the ground beans is quite different from = the whole roasted bean.I was judging them as being too dark. So we both got wired and gave the Giotto a real workout. |
This is a multi-part message in MIME format. the most common mistake with lighter roast beans for espresso seems to = be running the machine at too low of a temp. other than that, make sure = you stick with very low acid beans. a good test is to do a batch of = Fazenda Laranja Cravo to Full City, rest 72 hours, and pull ristretto at = around 203F. should be sweet, thick and smooth. then go lighter if you = want, start adding various accent beans if you want, in general tune to = your tastes. -c |
