That might be a long list-if they are roasted to full city or a
little beyond (hard, high elevation beans can be too rough for
me without some rest when city roasted). The Pluma Hidalgo is
great right out of the roaster, as is the Sulawesi, Guatemala
Antigua, Bolivian Centoproc, and Organic Bugisu. Those are all
beans I roasted yesterday and tried right away. As Rick said,
after a couple of hours rest they can go into a mysterious
"sulk" for a couple of days before releasing their full,
balanced flavors again. There's something about the powerfull
rush of unbalanced, but kickass just-roasted flavor that you can
only experience if you roast your own.

Thanks, Charlie. I want to put together a list of coffees that are good =
freshly roasted in the event I run out, have unexpected company, etc.
