This is a multi-part message in MIME format. Had a chance to try those beans from the 'disaster' roast I talked about = last night - after they sat for 14 hours - I ground up 12 grams and fed = them through my Lusso, lever-action machine. How were these poor, abused survivors of an unintended double-roast? In a word: "Fabulous!" The pre-infusion went for about 7 seconds, and I was worrying that I'd = over-tamped and choked the machine, when two thin, very dark-red/brown = 'mousetails' appeared, I released the lever, and it slowly moved up, = with two thick, viscous, streams of coffee hitting the glass. About = 2/3's of the way up the lever stroke I saw red foam appear in the = streams, and crema floating on the shot. I did a light 2nd lever-stroke, which was almost all yellow/red crema = and pulled the glass at about a 1.5oz shot. The drink looked good in the glass, the espresso was a very dark = ebony/brown under strong light, capped with a quarter inch of dense = yellow/tan crema. OK, so far, so good - I gave it a good sniff, Damn! It smelled just like = the beans, rich, earthy, and full of coffee promise - no sourness, and = no off-putting 'chemical' scents. Well, time to take a sip - I was still dubious - remember, these were = beans that should have been garbaged, the re-roast was a desperation = measure. Just one quick, small, sip because the Bodum Pavina glasses = keep everything very hot.... OMG! (Oh My Goodness!) I was going to just take a small sip, I was going = to take a picture, I was going to cap the shot with some sweet = microfoam, and then savor it at my workstation - I wasn't going to just = stand there and Hoover the blinking shot down like some giggling lunatic = - but I did. Sigh! I'll play some more with these beans after work today - the taste = is still lingering, and it's still good. Cheers Jim |
