The roaster is my CCR (computer controlled roaster). I may have one extra in my current lot. Yemen Mokha Sana'ani: As espresso, this is extremely well balanced for single origin shots, with plenty of sweetness and layered complexity. The finish is nicer than brewed, and with a long lingering aftertaste. But as an vac pot this is also very good. The nose reveals an intense intoxicating aroma with notes of bright fruitiness, a winey flavor for the acidity. All of these sensations are felt also after swallowing the coffee in the long lasting aroma that remains for several minutes. Its taste is round and velvet-like, substantial full body There is no astringent taste. As the coffee passes through your lips it begins with a burst of pungent(the good), earthy, after the first layered of flavor, a light, delicate fruitiness is revealed, and in the end a bit of spiciness. The coffee has a good, dried fruit character. It has great fragrance as a dry coffee and great wet aromatics. The aftertaste is long but the fruity notes alone are a compelling reason to sip this coffee! I never realized that Yemen Mokha Sana'ani could be that good. For blend recommendations, this coffee might do well with a chocolaty Brazil for a smooth low toned espresso but for the rest of us who enjoy a single origin espresso this is an excellent cup of exotic coffee. WELL DONE with your roasting technique and especially with the computerized controlled program that you developed for the Hottop. It seems that you have the best of both roasters air and drum in one unit. Regards, Jeffrey Pawlan www.computercontrolledroaster.com |
