How's the last quarter-cup?
After tweaking their parameters for a month, Intelligentsia still can't
serve a Clover without fines that embitter the bottom fifth or so of the
cup.
Clover: awesome top half; hand the rest of the cup to a French press fan.
;-)
Seriously: IMO, they have to solve the fines problem. Here's what's at
stake: about the time *$ starts getting old for folks who turn to indie
shops for good coffee, the indie shops start serving coffee that has a
fines-embittered finish. Then, just as *$ conditioned a generation to get
confused about the difference between strong and burnt coffee, the new
generation gets conditioned to believe that a fines-embittered finish is
wonderful, because after all it came from the wonderful Clover machine?
I don't think so. That's not what I want to see happen.
For $8K, ya'd think they could put a final-stage centrifuge in the thing.
