For those at the mercy of outside temps, like me, here's a thought: Find a way with box, small & thermostatically controlled fan & the exhaust from the roaster to raise the temperature inside the box to a certain level. Still hit second crack in acceptable times in temps well below zero in Wisconsin. In fact, my winter coffee tends to taste a little better than my summer coffee (longer roast times).
