One of my favorites (I don't own a copy - yet) is "The Village Baker," by Joe Ortiz. It's out of print (I had read a couple of yrs ago that a new printing was in the making, but unfortunately, I can't find anything about that now). At any rate, the book covers everything, from the grain itself, to various rustic techniques used by European artisans. To start bread making, as others have said, nothing beats having someone show you, even once. I learned from a neighbor when I was a teenager. Won't say how many years ago that was...
