As with just about all questions, there's going to be someone who has a differing opinion, but cooling beans quickly stops the cooking process and allows you better control of the level of roast. I don't think it's possible to harm beans by cooling them quickly. A drop of hot beans into a nitrogen vat might be an exception though. Could be hazardous to your face.
