I still have a very basic system, but one thing that I see on most peoples'
cooling platforms is that they have holes in the sides of the bowl, as well.
 I suspect you may not have much suction because you don't have enough
airflow through the colander...
but maybe someone who actually has one of those will pipe up...

Jamie,
Your vacuum system is probably on the low side (100cfm probably a 1" hose).
On the small opening on the hose it does it's job, but when connected to the
larger area the air velocity  slows down. You might need something  
around 300-400cfm
 with about 2" dia hose for good suction.

Is greater cfm needed? The pertinent question seems to be: does it cool your
batch close to ambient in 3 to 4 minutes? With or without stirring? (Faster
cooling with stirring of course.) If yes done, if no keep tweaking.

Having a good seal bowl to bucket would give best flow through the bowl so a
good idea. Rather than taping might use one sided sticky insulation foam
tape on the bowl lip to form the seal so easily lifted on and off. The
weight of the beans should be adequate to compress for a seal I'd think, but
haven't tried it. (don't use that method of cooling.) Just a thought.

Cool.  I found a big roll of the stuff in my drawer.  I put on 3
layers of it around the inside upper lip of the bucket.  Now I can
just slide the bowl in and out of the bucket, and it forms a nice
tight seal.

I just roasted and dumped 1 pound 5 ounces of Costa into the cooling
setup with the shopvac mini turned on.  It didn't feel like much air
pressure at all.  However, with minimal stirring, the beans were at
room temperature within about 90 seconds or so.  I am sure that it
stopped the roast within the first 20 to 30 seconds.
I am going to go roast 2.5 pounds of SM columbian and see how it works
out cooling that down.
Thank you everyone for the help and all the suggestions.
I plan to attach the shopvac hanging bracket to the cooling bucket, so
I will have a all in one cooling setup and is easy to carry around.

I was going to say the same thing - mine go up the sides...  I did the
bottom only first, but it was not pulling enough air.
I also have a much larger vac, that doubles as my woodshop vac.

A model turbojet engine can be had for under $5,000. The intake diameter
could be ducted to match the diameter of the Holy Pan. If the engine were
running and the Holy Pan dropped over the ducted intake, the engine would
flame out instantly- HP wouldn't allow enough air flow.
Take a bucket of water and dump it in the HP. It will take time to drain
through.
Take the same bucket of water and dump it through the same size screen mesh
colander. Is your imagination turned on?
The screen mesh practically wouldn't exist to the water flow. Or, maybe
another illustration might be more salient- You drove your outboard into a
log in the rush to get back before twilight. You have to bail water like
crazy, or you're going to have to do some olympic swimming to get to the
dock.
Rather bail water with the HP or the screen mesh? Good for bailing water $B"A(B
bean coolers.

Well, 2 and a half pounds of coffee rolling just out of first crack is
hotter than hell.
It melted the end of the vacuum hose down into a clump of plastic
severely restricting the air flow.  Mind you the bowl was still 10
inches above the vacuum hose end that melted.
The bucket is fine.  I will have to put some other type of end on the
vacuum, Metal pipe perhaps.
Otherwise, it seems to work remarkably well.  If it had not melted, I
am sure it would have cooled the batch is no time flat.  I think it
would even cool a full 4 pound batch as long as it doesn't melt the
vacuum hose.
