I just roasted 1/2 lb of 2008 IMV, p3 to C+, rested 24hrs. She still dazzles the tongue with blueberry notes. I had 1.5lb vacuum sealed and in deep freeze (i.e., non-defrost) for about 2 years, the longest I have stored green. While not as bright as it was fresh, this is still an amazing cup. Ivan, I'm in complete agreement! I've had some vacuum packed since I received it and roasted a batch a couple weeks ago. I found it to be still outstanding! I have been Vacuum packing my greens for years now. It seems to at least double their life expectency. Members of the list ( I know MiKe) was one did a study of the effect of vacuum packing and freezing on greens. Ha! This list is like a coffee support group. If I told anybody I know that
I vac+freeze green coffee to roast 2 years later I think they would have me
admitted. I don't tell people 1/2 of the things I do to get a great cup
because the 1/2 I do tell makes them think I'm crazy.
Well, I guess the next step is a cryonic freeze to see if we can keep a
pound preserved for 5 years or longer. Hey, they keep wine that long!

Ivan, personally, I far more respect a person who is willing to try something crazy- than an expert who is completely closed minded and set in their ways. Personally, I have wanted to try "aging" my beans in my cigar humidor for a year or two just to see what would happen! (and let me tell you, this is not my only hobby!
