I just roasted 1/2 lb of 2008 IMV, p3 to C+, rested 24hrs. She still dazzles the tongue with blueberry notes. I had 1.5lb vacuum sealed and in deep freeze (i.e., non-defrost) for about 2 years, the longest I have stored green. While not as bright as it was fresh, this is still an amazing cup. Members of the list ( I know MiKe) was one did a study of the effect of vacuum packing and freezing on greens. Ha! This list is like a coffee support group. If I told anybody I know that
I vac+freeze green coffee to roast 2 years later I think they would have me
admitted. I don't tell people 1/2 of the things I do to get a great cup
because the 1/2 I do tell makes them think I'm crazy.
Well, I guess the next step is a cryonic freeze to see if we can keep a
pound preserved for 5 years or longer. Hey, they keep wine that long!

Ivan, personally, I far more respect a person who is willing to try something crazy- than an expert who is completely closed minded and set in their ways. Personally, I have wanted to try "aging" my beans in my cigar humidor for a year or two just to see what would happen! (and let me tell you, this is not my only hobby! Yea, I've never been a straight "by the book" type of person either. I start with the book, respect it, but want to push the envelope or try different ideas that my my mind cooks up. For example, this week I am going to try roasting 1/4lb coffee with 1/4lb of almonds in my Behmor simultaneously. Will it work? Who knows, but I will find out. After that I will try the same thing with cocoa beans. Worst that can happen is that I'll lose a 1/4 of coffee. But I think roasting things together might give a unique character to the beans. It is a Japanese green tea with brown rice in it. Very weird idea but it is hands down one of my favorite tea blends. Personally, I make home made tofu. I want to try chocolate tofu cake, something I found on the Internet. Hadn't thought of roasting the almonds with the coffee... the almonds seem to roast quicker, and cool slower, but if you did the right batch size of beans I suppose it should work out. From roasting over the campfire on trips I've decided that almonds pick up other flavors like smoke pretty easy, but the coffee didn't taste smokey... so you'll probably pick up some coffee roast flavors in the almonds.
