Hi, Always nice to hear Toms voice, for international customers that until now have never visitted Sweet Marias. I had hhoped it was longer than the 5 minutes maybe less than it actually is. Also I wonder why the AE was left out, maybe because of the short time? Claus |
It came from a 30 minute conversation, so heavily edited. I think she
is going to make a "Part 2" out of this as well, with more on home
roasting.

Lo and behold, I opened up my OPB e-newsletter and I see Tom Owens and Sweet Maria's. How awesome is that! Here in Zigzag, OR it's on Sunday at 6pm. I'm proud to be a customer for the last 5 1/2 yrs. I bring home-roasted coffee from Sweet Maria's to every User Acceptance Testing and Go Live our electronic medical record has. Sweet Maria's is becoming becoming legend. Congrats, Tom, Maria and crew. It was a nice segment, I think it came off sounding understandable for the general public or foodies. I hope they air a home-roasting segment soon. Funny that now I want to try dried limes and build a bread oven. As for the Bouno kettle, I've been happy with my liquor bottle pour spout in a #7 one hole stopper in my plain old kettle. Maybe I should make a YouTube video :-) Contracts, Tom. On Jul 24, 2010 11:35 AM, "John A C Despres" wrote: Tom's portion begins at 14:45. Great job, Tom! Unfortunately, the emphasis was on brewers and not on the raw materials. Not Tom's fault. I think that the host of Splendid Table (ST) doesn't understand many food-related subjects, or just isn't able to get into subjects in any depth. That's understandable because she is trying to cover many aspects of food and many food professionals find it all-consuming to devoting their lives and energy to just one facet of a very big world. She would do much better imo if she would listen a bit more. I believe that if Tom were in more control of the interview's subject matter, he would not have steered the emphasis toward brewing. The segment would have been much better, and much more useful for the target audience if the discussion had moved into the world of fresh, specialty coffees. Brewers are only interesting when the coffee is not the limiting factor, not the case for people who don't share our proclivities. And...espresso is not brewed coffee. If you wanna drink espresso you need an espresso machine of some sort. If you're after a good brewed cup, you do something else. The host of ST was clueless on this point. I suppose it's good press but it was a missed opportunity on the part of ST. They conversed and interviewed one of the best sources of coffee and coffee knowledge, and didn't tap any of it. -Greg |
I have to disagree. Splendid Table is not meant to go into depth about every subject, but instead to open our minds to new ways to think about foods. Tom said that he thinks there will be another segment on roasting. Lynne is a brilliant woman. She is really a food anthropologist, and her area of expertise is Northern Italy, specifically Emilia-Romagna. The title of the show, The Splendid Table, comes from her first book of the same name. Tom, it was great. And it was fun to hear your voice! Again, I'm thrilled that Sweet Maria's is doing so well, but not the least bit surprised. I enjoyed the interview, and yes, Linda is definitely contrained by
the forma in terms of depth of topic etc. I was nercous to do this,
even though it was recorded, but she but me at ease and I ended up
laughing through half of the interview. There is a second part all
about home coffee roasting with emphasis on air popcorn poppers,
since she was interested in an easy, low-commitment way for someone
to try it out. In both the focus on pour-over drip, and on air
poppers for roasting, I thought she showed good instinct in tending
toward simple, no-frills ways to approach coffee and get good results
(or at least have fun).

I have to disagree with Greg. Lynne is a superb host of a wonderful show and in my mind demonstrated no clueless-ness about anything. She's a very curious person and always willing to learn. Perhaps it's true she was at some point unaware of the processes of certain brewed coffees, IE a moka pot, but after listening again, I find her question on Tom's take on a moka pot demonstrates her interest in his opinion, but demonstrates no ignorance at all. Why shouldn't she discuss brewing? It's the one thing almost every single coffee drinker has in common. Improving brew technique, regardless of bean source improves freshness. I suppose a case could be made for choosing ones grinder; maybe that should have been what the interview was about, but not everyone grinds their coffee. No, brewing is the common denominator. Baby steps. All in all, The Splendid Table is a splendid show. Well, my mom heard him yesterday and liked the segment and thought he was amazingly down to earth and knowledgeable. Plus, if we get people to appreciate good coffee, then it should carry over to the greenside as well. At least that is what I have noticed when give friends and coworkers some freshly roasted beans. Wow - sorry about all the typos. I have a big band aid on my finger
and it seems to be severely affecting my typing today! Anyway, I was
saying the host is constrained by the format and time allotted but we
did record material for a home roasting segment. I hope they use it,
but no date on that. Yes, she is a good conversationalist and
genuinely curious. It's not going to be the venue for really being
technical about a subject, or half the listenership would probably
tune out. Realistically, it's just a format to whet the appetite.
People can take it from there... Tom

I love the Splendid Table. I think the format is really a good one, because enough information is proved to as Tom said, "whet the appetite". But usually that whetting is supported by web content. So if folks travel the interwebs and get the Sweet Maria site, they will find a tremendous amount of information on coffee! I know I did! Christine |
Is that show the basis for the old SNL spoof "The Delicious Dish," with Molly Shannon & Ana Gasteyer as the hosts?
