My last few CR "cups" had been so so. I was beginning to wonder if I'd order more when I ran out. Roasted another batch 3/5, LFC. Brewed my first cup of the day Saturday using the CRLM at 30hrs rest, 14g - 5oz - 25sec ristretto cafe crema pull plus 5oz hot water for Americano. Outstanding cup. Wonderful. Don't know if I'd been missing on the roast or brewing technique or what. Only have two 1/3# batches left unroasted so went to order more. Tom's out!!! Another source has CRLM greens but I've never ordered from them. (Eugene, OR source. I've heard them mentioned on the list.) Debating whether to wait for Tom's new crop shipment or risk it... Any ETA Tom? You might remember my "confessions of a drifter" I posted right around
Christmas. I ordered CR-LM from them (there can only be one in Eugene) and
was stunned at the difference in bean quality. I ordered a couple of
different beans as well that were ok - but the look of the CRLM beans and
the flavor of the resulting roast made me wonder immediately what Tom did
with his beans that got flooded. |

April -they dont rush this stuff. Just received a buch of photos for
their new mill and a few words from Drew about the cupping of the new
La Minita and La Magnolia down there -excellent he says. I stop
carrying current crop Centrals when I sense any impending drop-off in
quality ...meaning that if you buy it NOW you much experience
diminished cup quality in 3-6 mos. I just feel I need to keep things
very fresh because I need to account for the storage time once you
receive it. You are not going to get a spectacular cup from the LM
right now. A very good cup but not fireworks. Its a really good time
to take your focus off CR coffee and look to other origins. The
payoff is that in April, perhaps something in late March, will really
be astounding. We just received a standout early Guatemala from La
Laguna estate -a fraijanes. Its not a fruity (like Huehuetenango)
Guat, but has great Antigua-like character. Any other new crop Guat
and Costa samples I have received have cupped "green" ... and you
know they are mechanically dried and rushed to the market to fill a
void. Its really important not to buy new crop until the good, solid
ones start to ship, and then its a matter of cupping LOTS of samples.
Be aware that any coffee rushed to market, improperly mechanically
dried (you can smell smokiness in the green coffee, and they have a
particular shiney-pale color sometimes) are NOT going to store well.
You can see quality drop-off in as little as 3 mos. from this type of
green coffee. I was stung 2 years ago buying a Costa Rican like this:
I chose to roast it all for a bookstore we prepare coffee for,rather
than sell it green. Its times like that I am really happy to have a
bigger roaster!

This is a perfect example of why I buy 99.99% of my coffee from Tom, he is always looking out for his customers.
