Well, one reason to do it might be too many atmospheres of pressure becasue
supposedly coffee quality suffers over 25 atmospheres. But since it is in
no way possible to develop that much with just co2 degas pressure, its not
really a worry. BTW, air roast degas more in the roast chamberand in
cooling. The coffee puffs more too during roasting, due to this added
volume of CO2 degassing. And of course a darker roast is going to degas
more easily since the coffee is made more porous as the cellular matrix is
fractured in the second crack...

The other reason is that not venting this overpressure can result in a burst
vessel if you use ball-type canning jars. Remember that these jars are
designed to withstand a vacuum, not positive pressure. Awhile ago Jill broke
one of the jars we had been using for storage for ages. At one point around
a portion of the bottom rim the glass was as thin as a microscope cover
slip. Since I have gotten some pleasure out of sealing these things down
tightly (back at the beginning of my roasting adventures) and then listening
to the loud "Psssssst!" when I unscrewed the lid, its a wonder that I didn't
end up with glass and coffee all over my kitchen. And had I been holding it
at the time? Hmmm...
Leave the lids loose. No probs, no diminution in bean taste and no big
bangs...

is it best to leave the beans out in ahe open, say, in a dish overnight to
degass or do most folks just put the cooled beans in a jar and cap it
loosely?
