Hey, this is the taste I have been searching for for years! I once had some "Costa Rican SHB" from a now defunct coffee store (long before I had any idea how non-specific that appellation was) that was wonderfully full and choccolaty (sp?) and not a bit bitter. They folded soon after, and I never duplicated that taste.... until now. Well, my first batch of Costa Rican Terazu Los Frailes is dang near the same taste! I roasted it to a medium roast (10 on my particular ALP), and the first cup was terrific. Smooth, deep, with pronounced choccolate notes, and not a trace of bitterness. Strangely, while most of my coffees seem to improve with moderate aging, this one seemed to decline very slightly. I can't be sure, since my tase changes noticably from one mornign to the next, but I think the choccolate undertones have diminished a bit in the 5-6 days since I roasted. A terrific coffee!
