| Hi All, I have an extra drum for a Gene Cafe roaster. The drum is complete, but there is a crack in the glass. I received it once with a replacement roaster here in Korea, and they sent me another one right away, so I've never used it. | I have just received the 250 gr. of Panama Esmeralda Especial that Ed Bourgeois offered in the recent tradition and to avoid becoming a delinquent tradition participant, I now offer up the following: A stainless canning funnel that is a perfect fit for a 58mm portafilter. I use one to prevent the loss of ground coffee and corresponding mess in making the move from grinder to portafilter. This one has about a half inch lip that I found caused too much disruption of the coffee when it was removed from the portafilter so I trimmed the one I use back to about an 1/8 inch lip. I am very happy with how it works now and If the winner so desires, I will trim theirs back in the same way. To enter just forward this message back to me by 5:00 central time Friday the 15th. | Thanks Barry, I just watched it, and that looks exactly like the funnel I am offering. | This is something I have been thinking on, and still am unsure of my position. I have been using a Ridgeline and adore the results. Does that mean my technique needs work? Maybe, maybe not. But over and over the CUP we say is what is important, not necessarily how you get there. Jumping into the middle of your discussion on knitting needles, chopsticks, flat blades etc (to swipe I assume), I have tried those too, but those didn't improve the cup, so I left them as is (i.e. my hand). I don't see any problem with using a ridgeline. It's true perpendicular tamp is what it is providing. Would you look down on a carpenter for the right tool (like a speed square) instead of eyeing it? I doubt it. Again, I am not sure where I stand on this fully, and I kind of see where you are coming from, but I don't think I see anything wrong with using a tool to make your shot better. | I guess I should not say anything about the Ridgeline since in reality I haven't used one. Yet I don't see how it can "assure" an "even" perpendicular tamp when the ridge doesn't come into play until the end of the tamp when it contacts the basket. IF the tamp is begun uneven, not being perpendicular, then "corrected" at the end of the tamp by the Ridgeline hitting the basket lip that could not in my experience be as good at preserving the distribution as a perpendicular tamp from the beginning. Using the god given tools of three fingers in a triangle simultaneously touching the tamper piston and basket lip at the beginning of the tamp enables lining up the tamper perpendicularly at the beginning of the tamp. I would like to try a corian tamper piston sometime, I never did like the feel of any of the wood piston Thors on the grinds compared to very smooth hard SS. BTW, I didn't mention a "flat blade" though I did at one time use one after watching Dr Joshuma and his staff use tongue depressors many years ago. But I too have used my finger for the PF sweep for years. My REAL main reason for the reply was Barry's continued insistence using a bottomless PF is "training wheels". Go ahead pull countless shots day in and day out every day for months with bottomless PF's in a busy environment, with very very seldom any channeling, and come back and tell me again. You SEE the shot, you have nothing interfering with the crema's path to the cup, you can keep your heavily used PF's clean very quickly and easily. Shot build problems easily and immediately seen. Oh and tamping with a bottomless PF much easier to repeatedly align for perpendicular tamp especially when pulling shots rapidly back to back to back to back. A good deal of my ability to work fast in the Kafe I attribute to learning and using sound professional techniques at home from the git go instead of crutches. OTOH I'm really not against anyone using whatever method they need that floats their boat to achieve a stellar shot be it WDT with a knitting needle, chopsticks or whatever. I simply chose to follow the lead of top professionals when I began learning and believe good consistent results can be achieved without convoluted methods. Hey, some shops even use the LM Swift grinder with it's built in self tamping until their baristi learn to tamp properly, some use it forever. | Jack, I bought a couple of these well over a year ago. I picked them up at a local feed and seed store that also sold canning supplies. I had a inch/metric tape measure and as I recall it was describes as 2 1/4 inch hole and it came in just a touch under 58mm so I bought them and after trimming it down, it worked fine. He replied that art of the Tradition was that it was absolutely no cost to the winner. | When I had my Untraditional Tradition some months ago (for my homemade biscotti), I asked that the recipient(s) pay for the postage, as I wasn't able (may never be able, ha) even to afford paying postage. I have no shame in admitting my poverty, lol. But seriously, times are getting hard for many, and this may be a way for others to take part in a tradition (if the rules were made up originally... then they should be able to be adjusted...) Would think the postage would fluctuate according to distance from the giver... biscotti can be put in a flat rate box, so that's what I was going to do, until a kind member offered to pay for the shipping - so we had a Combination Duo Untraditional Tradition... it's enough to make my brain hurt... Otherwise I think I'd expect to pay the few dollars it generally costs; if it's going to be something expensive then I'd do it differently. | The tradition started by having the recipient pay the shipping then we decided that that was just an additional hassle because a winner was expected to give up a tradition it made sense to make it easier to pay the shipping on the offer rather than the shipping on the item received. At that time we suggested that foreign winners should be willing to pay the difference between what a within the USA shipment would cost and what it cost to send the item to their non-USA address. We also suggested that if someone wanted to offer up something extra heavy like a full sized grinder or an espresso machine it would be appropriate for the winner to pay the shipping. I would suggest the absence of a random drawing on the latest offering takes it out of the spirit of a tradition and that the person who spoke up first should not be expected to offer up something else.
