I have found that the wet-process is really amazing at a very light roast, and I am afraid some people may not like that roast level. A true City roast is ideal ... enough time to confirm 1st crack is over, then stop the roast immediately. Actually I just got a 14 minute city on the Idido Misty valley and it is great. Clean & lots of flavors.
