It's hardly ever really hot here, but it has been in the 30ish + (C) range (that would be high 80s low 90s F)for the past few days and my house is hot, hot, hot--even in the basement where I store my beans. I wasn't really sure what to do with my greens. I have about 30 pounds of various sorts. What I decided to do was to vac pack them and throw them in the freezer. Is that what you hot weather folks do? No one I know (well) has AC or I would have taken them for a visit. This too shall pass. It is supposed to get down to 4 C (about 39 F) on Thursday. I guess really hot is relative. It's winter time for me if it's in the low 60's at night. With a little shade and a breeze, 90°F is quite comfortable to me. Working in the yard under the midday sun can be a bit much. If you consider the trek that the beans made to get to your place, a couple of hours in the heat and humidity aren't a big thing. I figure if it is comfortable for me then the beans are all right. There have been no problems with standard cupboard storage in the house with an average temperature of 80°F at 60-70% relative humidity and three to five months on the shelf.

Vicki, That's exactly what I'm doing. I keep 90% of my green in the freezer in vac sealed bags. I prefer a freezer without a defrost cycle (I'm old school on this). My ready to roast greens are a selection of various regions that will be roasted in the next week or so. I keep them vac-sealed, but at room temp. I live in a hot-humid place in the summer. Who knows how much difference it makes, but I figure there's little else one can reasonably do to store the beans. If you're really going for top-notch storage (of anything), get a gas-flusher, which is an amazingly simple and effective way to preserve freshness, but expensive start up costs. If I had some really expensive coffee to preserve, I'd just flush the vac bag with some Wine Preserver (inert gas), vac the bag, stuff in the freezer and lock the door. Overkill? Costs pennies per bag. Not much to preserve golden beans. I know others here will have their own methods. It kinda depends on where you live. I remember a few months back that arid climates are pretty bad for green coffee because it dehydrates the beans from their normal 11-13% moisture levels. If nothing else, just get some cheap vacuum seal bags and store the beans in a place that is about 80F. And only buy what you'll drink in 3-4 months.
