| I put a TC into my BM to watch temps climb during the roast. I did three roasts tonight, Sulawesi Toraja, Nicaragua Pacamara PB, and Ethiopia WP Koratie. My typical action is that I back my HG down around 1st crack. The Sulawesi was headed for FC+, so I turned the heat down at about 1 minute after the begininng of 1st crack. no problems with roast progression. The Koratie was headed for C, so I turned it down at 380. again, no problems. The Nicaragua was headed for C+, so I turned it down at 385. 1st crack was pretty indistinct with this one, but at about 394, it started to back-track. It bounced between 393 and 394, then held solidly on 393, then went back to 394, then started to go back up again. Would this be considered stalling a roast? Is there any way to know if this might happen (this is a pretty standard profile I have). Is this just something that I need to experience with every bean? Or is it just something that I shouldn't worry about? | The orientation of the TC in the [roasting] process causes variations in the temperature indicated. Need proof? Get two of the digital TC meters and use them both on the same roast. They will not read the same, even if you put new batteries in both meters. Even with the two TC's fastened together, they won't read the same numbers. Close but no cigar. The IR meter is a good measuring device. Aim it at unobstructed beans because it will read exactly the targeted surface, not interior beans. | Bill, I would not worry about it. I've had stalls for up to a minute with no noticeable damage to the coffee.
