Topic: [Homeroast] Behmor roast time (15 msgs / 267 lines)

For many years I have run homebuilt roasters. The most high-tech was the computerized P1. FYI, those who rremember, the micro-controller version is just gathering dust. For the past two years I have been using the lowest tech version of my roasters. A kmart wok, with a 60 rpm gear motor thru the bottom, and a blade hand fromed out of alium stock. The heat source was a turbo oven, but as things failed, its striped down to just the heating element. The wok is insulated, and a variac allows me to reduce voltage about 4- 6 minutes in. Here is the question. I do 1 lb with the rig in about 12 minutes ( 3 -4 minute no bean warm up). I'm concerned that the behmors ~ 20 minute roast will signifcantly change the flovor profile. Thoughts? FYI. I may be getting tired of rebuilding roasters. -- I've seen things you people wouldn't believe. Attack ships on fire off the shoulder of Orion. I watched C-beams glitter in the dark near the Tannhauser gate. All those moments will be lost in time, like tears in rain. Actually, It reminds me of one of the proto-types I gave up on. "Hot Mama" was a Betty Crocker roaster oven. I could never get it to roast at any reasonable speed. I would guess that even if the Behmor roasted a pound in 12 minutes that the flavor would not be identical. The "air flow mod" may make the Behmor a bit faster, but I doubt that it will ever do a full pound batch in 12 minutes. I put the "slow-roaster mod" on the Behmor last evening and ran a batch. The thing NEVER went to "power-down mode" for temp control in the entire 16 minute P1 roast and never seemed to go to smoke-suppression after the change. Before it would go to power-down at about 5:30 to 6:30 e.t. and at about 9:30 would start smoke suppression. I will do a couple of batches this weekend to evaluate.* *I'll poke a themocouple in the chamber and see exactly what it is doing. On the plus side, it seems to hit C1 (based on just ONE roast) at a time where P2 could be useful now. Finally found Simple Green and cleaned the remaining interior as best I could--most of it is nice and pristine, but with a recalcitrant dark spot in the left indentation where the cradle for the round peg on the drum rests. Did two 1/2 lb. cleaning cycles after thorough wet and dry wipes to get rid of the cleanser scent. I roasted the Brazil Poco Fundo to C-C+, about 420gm at P1, the 1 lb. setting, no time added. Went fully through first crack which ended just when the cool cycle kicked in. Bean munch made me wish that wasn't the last of that bean and that I hadn't promised it to the folk festival. Next up came 430gm of Colombia Choco--suggested roast was FC-FC+. Had to add the full time at :59 left, but only needed 3 of those 4 extra minutes to get slightly into second, when I hit cool. Looked not much darker than C when I emptied it, but taste and texture were definitely a mid- FC. The last was a full pound of Colombia Excelso, recommended for C+- FC. Did the same as with the Choco, and needed only an extra 1:30 to get it to the first crackle of second, when I hit Cool. Yum. Kills me that my family won't get any of it. Only hope that my fellow performers and volunteers (wearing both hats this year) appreciate it! The Seattle Mt. Blend ain't chopped liver, but it ain't this stuff either! Sandy, have enjoyed reading the travails of finding simple green in the chi-town area! :) So, did it make a difference in the cleaning of the behmor? Was it noticeably cleaner? I finally got some oxy-clean for my cloth VP filter. Wow. It did get the interior noticeably cleaner except for that one recalcitrant gunked-on spot above the left-hand drum spindle cradle. But that didn't seem to negatively impact the performance of the roaster. I suspect if I sprayed it on there and left it for over an hour it might have worked, but I will say that Simple Green does leave a lingering odor that took several alternating wet-and-dry wipedowns and two cleaning cycles to eradicate. I find if I use Windex after every roast. I get no build up or smell. The trick is to do it after every roast before the sludge gets baked on.
