Matt,
This has been discussed several times, and the summary of the
discussions is that generally you should try to use up your roasts by
about 10 days or so after roasting. If they are used this quickly,
staling will not be a problem. You can put them in jars, or bags, or
leave them in a dish on the counter, in all cases, of course, out of
direct sunlight.
Many people have mentioned that if you store roasted beans in jars,
you should not seal the jars for a day or so after roasting. Leave the
cover off, or set it loosely on the jar. Sealing the jar too soon
seems to mute flavors.
