There's Been A Lot Of Talk Lately About Cleaning The Inside Of The Behmor. What About The Drum Itself? I Used Bon Ami On The Inside and It Worked Great. A Little Nervous About Soaking The Drum In A Bon Ami Solution. Any Thoughts?

Cleaning the inside of the Behmor is a must. It reduces the chance of chaff fires. In addition, keeping the walls shiny insures accurate readings for the thermocouple. The drum, however, should be left to develop a patina which will help flavor the coffee. I wiped mine down with a Cafiza solution, let it sit, sponged it off and rinsed. Got roast flavors off, but there is sort of a burnished bronze color remaining. Soaking in Bon Ami doesn't make sense, as Bon Ami is for scrubbing--it's a mild abrasive. Probably do better soaking in a grease-cutter like Dawn or orange-oil based solution and then scrubbing with a paste of Bon Ami on a sponge. BTW, I have been utterly unable to find Orange Clean or Simple Green anywhere in Chicago--not in Whole Foods (Seventh Gen. and their house brand have taken over) nor the mainstream supermarkets like Jewel, Dominicks or Target (it's disappeared and in its place is the Clorox "green" line--did Clorox buy the company or formula?) I use an orange based cleaner on the glass lid of my turbo roaster. Its about the only stuff that really cuts that smoke buildup. Barry, Hi. I hope this finds you well. Please excuse my ignorance on this one. I am very good at cleaning the inside of my Behmor after every roast, plus doing the 5th roast self-cleaning process. I have never cleaned the drum, but did have the same question and was about to post it when it came up. I see what you are saying, but won't the oils build up and present a fire or a smoke situation? Or do they get burned off, if they even get on it, during the self-cleaning? Sorry to ask such a basic question, but I just don't know the answer. Thank you, in advance, for your help. Cleaning off the oils is fine, but the metal of the mesh itself darkens (heat annealing?) to a patina that shouldn't be disturbed. Sandy just answered it. The oils will be driven off by the heat. It is the same principal as seasoning a new cooking pot. I know of absolutely no good reason to clean a roaster drum, be it Behmor, HotTop, Probat, Diedrich, USRC... Quite the contrary, drums roast best seasoned. Same goes for Rosto or Popper etc. chamber, let the roast patina be! Do you really think Tom's pulling the drum out of his Probat L12 and soaking it in anything? Why would you treat a small drum any different than the top professionals treat their roaster drums? It is not a solvent that removes rust, dirt and excess paint by chemical action. Bon Ami acts like a transmission that connects your arm muscles to the scrubbing and polishing particles. Soaking the drum just prolongs the cleaning cycle, because it just delays the application of elbow grease. If you don't care if your gets clean, just soak it in Bon Ami. Of course it's okay to ask anything about roasting on the List, or virtually anything coffee in general for that matter. Thoughts were asked for, I simply gave mine. And on second thought there could possibly be reasons to clean a roaster drum like the Behmor wire mesh. If over time the mesh got gunked over decreasing it's effective mesh opening size that might effect how the heat is transfer to the beans or chaff discharged. Indeed while the Behmor is a drum roaster it is also indeed very different design than a commercial solid drum roaster. Different in air flow, way heat applied to beans, way chaff removed, much slower rpm to think of a few differences. Which is not to say all commericial drum roasters are the same either! None the less if I was routinely roasting with a Behmor, which I'm not though I have one, I'd not bother cleaning the drum unless roast challenges arose. Then I'd soak the drum in a Cafiza (or PuroCaff etc.) solution, brush and rinse it. I do the self-clean cycle every five roasts and also then clean the inside surfaces with a damp cloth with a tiny little bit of dishwash liquid ("Dawn"). Then I come back through with a damp towel, water only, and wipe off the soap. It seems to do a fine job as the glass window is nice and clear afterwards and there is no discoloration evident inside the roaster where I have cleaned. I have never cleaned the drum. I have never had a roaster fire, nor have I seen more than a couple of chaff sparks in 40 + roasts. I normally don't go into second crack and I suppose if the roasts went that far, smoke and discoloration would be more of an issue and stronger cleaners might be needed.
