I just harvested my coffee crop for the year (1 cherry). I want to prepare and roast the bean(s). What do I do with it now? Take the ripened coffee cherry to the sink, rub off the skin and the pulp under it. Let it soak for a few days (if it floats, throw it away and wait till next year). Put it out in the sun for a week or so, until it loses all but 12% of its moisture, turning it daily, then roast! I guarantee it will be the best you've ever tasted... Enjoy!
